It's more than just one dish, it's a meal in itself,withfried dumplings and rice.

這其實(shí)不只是一道菜,而是一頓大餐,搭配著煎餃和米飯

The first thing we're going to cook is a curry of mutton.

首先要煮綿羊肉咖喱

So, originally it would be curried goat. Yes.Although you still get it with curried goat, you'reusing mutton.

原本應(yīng)該是用山羊肉 但是現(xiàn)在改用綿羊肉了

When I used to go out with all the different little groups of children and I says "curried goat",their little faces and they says, "It's a pet."

以前我經(jīng)常和孩子們?cè)谝黄穑?dāng)我告訴他們是山羊肉咖喱時(shí),他們會(huì)說,這是寵物不能吃

So I said, "Oh, my God. I better use mutton."

我就說那我還是用綿羊肉吧

So this is mutton, they all says...

然后他們才會(huì)同意

Mutton is a much under appreciated meat,but because it's hung for at least two weeks,it'sjuicier and more flavoursome than the more expensive lamb.

綿羊肉一直不被重視,這種肉因?yàn)榈跗饋淼臅r(shí)間長達(dá)兩個(gè)星期所以比貴的羔羊肉更加多汁鮮美

And it's perfect for slow cooking dishes like curries and casseroles.

而且相當(dāng)適合做小火慢燉的菜,比如咖喱和砂鍋

I've got the curry powder in.

I've put some carrots in, I put some celery in and, naturally you have to put our friend theScotch bonnet, and the garlic.

Oh, I use a mild madras.

And we'll go off now and we'll do the dumplings. Brilliant.
